Ever wondered how to achieve the perfectly crisp bite of a classic cotoletta or the delicate texture of handmade tortellini? Join Chef Flavia and discover the rustic elegance of Lombardy. Together, we will prepare a Northern Italian feast full of comforting favourites featuring Crostini with Shaved Fennel, Apple, Salumi, and Caramelized Walnuts; Handmade Squash and Ricotta Tortellini with Brown Butter and Sage; Cotoletta di Maiale (pork cutlet) with Endive and Radicchio Salad; and Torta Caprese (Chocolate Almond Cake).
Wine is included in the price of class. Wine pairings, a red and a white option, are provided by our resident wine expert, Amy McIntyre.
If you have food sensitivities or dietary restrictions please check with your local Cookery location, before registration. Adjustments to recipes cannot be made during class.
Cookery maintains an optional masking policy, you are not required to wear one during the class, however if you feel more comfortable with one please bring one.
